
• Basil pesto overeasy eggs 🍳
Ingredients: 2 eggs, basil paste, basil flakes, pepper, spinach, whole grain english muffin, mild tomato salsa, earth balance vegan butter (any butter works).
Method:
Eggs – Spray a nonstick pan & crack the 2 eggs into it. Apply the basil paste and swirl it around to cover the egg whites. Add in basil flakes & pepper. Put lid over pan. When almost done cooking add the spinach & recover for a little longer.
English muffin – Toast it & top with butter & tomato salsa. Then add a cooked egg to each half & you’re done!
